WHOLE GREEN OLIVES VARIETY ASCOLANA IN BRINE

The color of the fruit varies from green to straw yellow. This type of olives go through a de-marring process which is based on eliminating the bitterness present in green olives by using a caustic soda solution, and then going through a fermentation process in brine. Processed green olives have a firm and resistant texture.
